Slammin’ Shrimp Paella

Some friends and I went out to this Mexican joint one night that was well known for having good food. I decided to try the Shrimp Paella, which is basically a dish consisting of Scallops, Shrimp, Sausage, with a bed of Yellow Rice. Seafood is well known for being on the expensive side, so I decided only to use shrimp in this recipe. Suddenly I realized I was out of Sausage, so I improvised with Chicken. I also topped it off with some Frozen Peas for good measure. While it is a bit different than I intended, I must say it turned out great!

Sloppy Joe with a kick!!

This recipe was one of those throw together, easy ones that take no time at all. The only thing different, and that makes this Sloppy Joe worth a try is the Salsa. I poured a jar of the Spicy kind in here to give it a real kick. You can also put some Red Pepper Flakes in this as well!!

Crispy Chicken with Asparagus Sauce

I was a little apprehensive to do this one. I love Asparagus, but at times the ‘Cream of (insert random vegetable name)’ soup doesn’t translate the same way as the vegetable it comes from. I decided to give this one a go anyway, and I was glad I did. Just fry up some Chicken breasts, then make the sauce the way I did in this recipe. It definitely is a great change from the norm!!
