When I was a kid, the word Casserole made me cringe. The ‘Tuna Surprise’ was anything but, and the ‘Bisquick Quiche’ was God awful. Let’s just say they weren’t really kid friendly. However, any good Parenting is about (attempting) to introduce your kids to new foods so they’re not eating Chicken Nuggets for the rest of their lives. As I’ve grown into an Adult, I’ve obviously learned that there’s all types of foods out there. Yes, there are even many types of ‘Casseroles’ as well, not just the aforementioned ones. I only wish I was introduced to this recipe as a kid.

Therefore, I always stress caution to people to never go over the time a recipe says to broil anything, even if it’s ever so slightly. However, the result of broiling any meat is that it turns out so tender that it melts in your mouth.

It’s full of flavor, and the best part is you can cut the chicken breast up, and spoon it into a soft tortilla if you’d like. I garnished this dish with some Peperoncino salad peppers, and some cherry tomatoes which seemed to compliment it all the more.
