Easy Lemon-Chicken Rigatoni Recipe

Use a Rotisserie Chicken for this recipe!! You can use baked Chicken I assume, but the flavoring won’t quite be the same. I find that if you season the Chicken with some Basil, and Rosemary that it only enhances, and brings out the flavorings all the more. Of course we have to throw some Garlic in there, along with some Parmesan Cheese to top it off. To make the Lemon flavor, there’s a few ways you can do this. However, I just used Lemon Peel in the end, and found that it was a nice way to give it that Lemon zest.

Meatball Sub Casserole

When I was a kid, the word Casserole made me cringe. The ‘Tuna Surprise’ was anything but, and the ‘Bisquick Quiche’ was God awful. Let’s just say they weren’t really kid friendly. However, any good Parenting is about (attempting) to introduce your kids to new foods so they’re not eating Chicken Nuggets for the rest of their lives. As I’ve grown into an Adult, I’ve obviously learned that there’s all types of foods out there. Yes, there are even many types of ‘Casseroles’ as well, not just the aforementioned ones. I only wish I was introduced to this recipe as a kid.

Sausage Diavolo Pizza

What makes this recipe so rich in flavor is the combination of tomato sauce, sausage, and white wine. There’s a lot of little steps to this one. However, with proper preparation of your ingredients, you’ll be able to go through this one in less than an hour. Not to mention, it’ll be totally worth it once you taste it. You can also use this recipe on pasta as well!!

 

Sesame Pork Chops with Garlic Cream sauce. (An introduction to broiling)

Here’s a great beginner’s recipe for broiling meat. These pork chops are simple to make, and have an equally as simple to make garlic cream sauce that goes with it!! I’m always afraid to broil, and don’t do it often at all. Broiling can get away from you really quickly, since it’s at such a high heat!! Therefore, I always stress caution to people to never go over the time a recipe says to broil anything, even if it’s ever so slightly. However, the result of broiling any meat is that it turns out so tender that it melts in your mouth.

Tasty Pepper Steak Stir-fry

Here’s another quick & easy skillet meal that takes no time to make!! You can serve this over rice, or egg noodles.

Santa Fe Chili Chicken

This recipe is one of my favorites recently. This one is not overly involved, simply put together, and tastes absolutely amazing!! It’s full of flavor, and the best part is you can cut the chicken breast up, and spoon it into a soft tortilla if you’d like. I garnished this dish with some Peperoncino salad peppers, and some cherry tomatoes which seemed to compliment it all the more.

Cheesy Noodles & Tuna

Here’s a recipe for if you’re on the go, or don’t feel like spending more than an hour in the kitchen cooking. This one takes less than 30 minutes, and is super easy to make!!

They will range from quick & easy meals, side dishes, grilled entrees, and different types of salads. Spring has sprung, and Summer isn’t too far off. So here’s a recipe for 4 different types of wing sauces that you can either bake in the oven, or throw on the grill!!

BBQ Cajun

  • 3/4 c. of BBQ Sauce
  • 1 tbsp Cajun spice mix

Lemon Pepper

  • 1 tbsp Butter
  • 3 tbsp Lemon juice
  • 1 tsp Pepper
  • pinch of salt

Garlic Herb Wings

  • 1 tbsp Butter
  • 1 tbsp Garlic
  • 2 tbsp Italian herb blend
  • pinch of salt
  • 1 tbsp Parsley

Teriyaki Wings

  • 1/2 c. of Soy sauce
  • 2 tbsp of Brown sugar
  • 2 tbsp of Honey
